  • 1 sheet vegan puff pastry (thawed)
  • 2 cups mixed mushrooms (button and cremini, chopped)
  • 1 medium sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups fresh spinach (wilted)
  • 2 tsp fresh thyme (chopped)
  • ¼ cup walnuts or pecans (chopped and toasted)
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste
  • 2 tbsp plant-based milk (for egg wash)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic; sauté until translucent.
  2. Stir in the chopped mushrooms and wilted spinach. Cook until mushrooms release juices.
  3. Season with salt, pepper, thyme, walnuts, and balsamic vinegar. Mix well and remove from heat.
  4. Roll out the thawed puff pastry on a floured surface until large enough to wrap the filling.
  5. Spoon the cooled mushroom mixture onto the center of the pastry. Fold edges to fully enclose filling, pinching seams closed.
  6. Preheat oven to 400°F (200°C). Brush the top with plant-based milk and place on a lined baking sheet.
  7. Bake for 25-30 minutes until golden brown. Let cool slightly before slicing.
