  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh mozzarella cheese, shredded
  • 1 cup fresh basil leaves
  • 2 cups tomato sauce (homemade or store-bought)
  • 9 no-boil lasagna noodles
  • 1 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add diced chicken to the skillet and cook until no longer pink, about 5-7 minutes.
  4. Stir in tomato sauce and half of the basil; simmer for 10 minutes.
  5. In a baking dish, layer the chicken mixture, lasagna noodles, mozzarella, and Parmesan cheese. Repeat layers until ingredients are used up, finishing with mozzarella on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes or until bubbly and golden brown.
  7. Allow cooling slightly before slicing; garnish with remaining basil.
