  • ½ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • 2 large eggs
  • 1 cup white chocolate chips, melted
  • 1 tsp peppermint extract
  • ½ cup heavy cream (for frosting)
  • Crushed peppermint candy canes (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, cream butter until light and fluffy. Gradually add eggs one at a time until fully mixed.
  4. Melt white chocolate chips and stir into the butter mixture along with peppermint extract.
  5. Gradually add dry ingredients to the wet mixture while mixing in milk as needed to keep the batter moist.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before whipping heavy cream to stiff peaks for frosting.
  8. Frost cupcakes generously and sprinkle crushed candy canes on top.
