  • 4 cups green cabbage (shredded)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 6 cups low-sodium vegetable broth
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 bay leaf
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping vegetables.
  2. In a large pot over medium heat, add 2 tbsp olive oil. Sauté onions and garlic until translucent.
  3. Add carrots and celery; cook for about 5 minutes until slightly softened.
  4. Stir in diced tomatoes and vegetable broth; bring to a boil.
  5. Incorporate shredded cabbage, thyme, and bay leaf. Season with salt and pepper.
  6. Reduce heat to low, simmer uncovered for about 30 minutes until veggies are tender.
