  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 ripe tomatoes, diced
  • 1 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • ¾ cup tzatziki sauce (homemade or store-bought)
  • Salt & pepper to taste

Instructions

  1. Marinate the chicken breasts in olive oil, garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. Heat a skillet over medium-high heat; add olive oil and sauté minced garlic until fragrant (about 30 seconds). Add diced tomatoes and cook until soft.
  3. Stir in orzo pasta and 3 cups of chicken broth; bring to a gentle boil then reduce heat to simmer for 10-12 minutes or until orzo is tender.
  4. Nestle marinated chicken into the skillet; cover and cook for an additional 8-10 minutes until chicken reaches an internal temperature of 165°F.
  5. Crumble feta over the dish before serving; drizzle with tzatziki sauce.
