- 1 cup fresh lemon juice (about 4–5 lemons)
- Zest of 2 lemons
- 1 cup granulated sugar
- 1 cup water
- 1 cup fresh basil leaves
Instructions
- Wash lemons, zest them using a microplane, and juice until you have 1 cup of lemon juice.
- In a medium saucepan, combine 1 cup of water and 1 cup of sugar over medium heat. Stir until dissolved, creating simple syrup.
- Add 1 cup of fresh basil leaves to the syrup and let simmer for 5 minutes. Remove from heat and cool completely before straining out the basil.
- Combine lemon juice, zest, and basil-infused syrup in a large bowl. Mix well.
- Pour mixture into an ice cream maker; churn until soft-serve consistency (20-30 minutes). If no ice cream maker is available, pour into a shallow dish and freeze, stirring every 30 minutes until firm.
