Ingredients

  • 2 ripe mangos (about 2 cups chopped)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract

Instructions

  1. Wash, peel, and chop the ripe mangos into chunks.
  2. In a blender, combine the mango chunks, coconut milk, honey or maple syrup, lime juice, and vanilla extract. Blend until smooth.
  3. Adjust sweetness if desired by adding more honey or maple syrup; blend briefly to combine.
  4. Carefully pour the mixture into popsicle molds, leaving some space at the top for expansion.
  5. Insert sticks into each mold and freeze for at least 4-6 hours until solid.
  6. Run warm water over the outside of the molds for easy release.
