  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 small red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your veggies by washing and dicing the cucumber and halving the cherry tomatoes. Finely chop the red onion.
  2. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  3. In a separate bowl, whisk together olive oil and lemon juice with salt and pepper.
  4. Pour the dressing over the salad ingredients and gently toss until well combined.
  5. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
