Description

Beat the summer heat with these vibrant Red White and Blue Popsicles! Bursting with fresh strawberry, creamy coconut, and tangy blueberry layers, they’re a fun and healthy treat that the whole family will love. Perfect for Fourth of July celebrations or any sunny day, these popsicles are easy to make and delightful to eat!


Ingredients

Scale
  • 1 cup full-fat coconut milk
  • 1 cup ripe strawberries, hulled
  • 1 cup fresh blueberries
  • 2 tbsp honey or maple syrup (to taste)
  • 1 tbsp lemon juice

Instructions

  1. Prepare your popsicle molds.
  2. In a blender, blend strawberries with honey until smooth. Pour into molds to create the red layer and freeze for 2 hours.
  3. Mix coconut milk with lemon juice. Carefully spoon over the frozen strawberry layer and freeze for another 2 hours.
  4. Blend blueberries with honey until smooth. Spoon this blue layer on top of the coconut layer and insert sticks. Freeze for an additional 4 hours or until solid.
  5. To release the popsicles, run warm water over the outside of the molds.
