- 1 cup full-fat coconut milk
- 1 cup ripe strawberries, hulled
- 1 cup fresh blueberries
- 2 tbsp honey or maple syrup (to taste)
- 1 tbsp lemon juice
Instructions
- Prepare your popsicle molds.
- In a blender, blend strawberries with honey until smooth. Pour into molds to create the red layer and freeze for 2 hours.
- Mix coconut milk with lemon juice. Carefully spoon over the frozen strawberry layer and freeze for another 2 hours.
- Blend blueberries with honey until smooth. Spoon this blue layer on top of the coconut layer and insert sticks. Freeze for an additional 4 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds.
