  • 1 cup orzo pasta
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (3-4 minutes). Stir in minced garlic for an additional minute.
  2. Increase heat slightly; add ground beef. Cook until browned (5-7 minutes), breaking it apart as it cooks.
  3. Stir in canned diced tomatoes and Italian seasoning; let simmer for 5 minutes.
  4. Add orzo with enough water or broth to cover it by an inch. Cook until orzo is al dente (8-10 minutes).
  5. Reduce heat and slowly stir in heavy cream; let simmer until slightly thickened (3-4 minutes).
  6. Fold in grated Parmesan cheese until melted; adjust seasoning if needed.
  7. Serve hot, garnished with extra Parmesan cheese.
