  • 1 lb smoked kielbasa, sliced into thick rounds
  • 1 lb Yukon Gold potatoes, chopped into bite-sized pieces
  • 1 cup bell peppers, chopped (use assorted colors)
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (400°F).
  2. Wash and chop the potatoes into bite-sized pieces. Slice the kielbasa into thick rounds.
  3. Cut large sheets of aluminum foil for each serving.
  4. In a mixing bowl, combine the potatoes, kielbasa, bell peppers, and onion. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  5. Place equal portions of the mixture on each sheet of foil. Fold up the sides tightly to seal the packets.
  6. Grill the packets on medium-high heat for 20-25 minutes until everything is tender.
  7. Carefully unwrap and serve hot.
