Description

Cheesy Jack o Lantern Quesadillas are the perfect addition to your Halloween festivities! These fun and festive treats feature golden tortillas filled with melty cheese and colorful veggies, all shaped like adorable pumpkins. Easy to make and deliciously satisfying, they are sure to delight both kids and adults at any gathering. Serve them with your favorite dips for a spooky snack that steals the show!


Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
  • 1 cup bell peppers, diced (orange or yellow)
  • 1/2 cup black olives, sliced
  • 2 tsp cooking oil

Instructions

  1. Prepare your ingredients by washing and dicing the bell peppers and slicing the olives.
  2. On one tortilla, layer 1/2 cup of shredded cheese, followed by 1/4 cup of diced peppers and a handful of sliced olives. Top with another tortilla.
  3. Heat a non-stick skillet over medium heat with a splash of cooking oil. Cook each quesadilla for 3-4 minutes on each side until golden brown and the cheese is melted.
  4. Remove from skillet and cut out pumpkin faces using a knife or cookie cutter.
  5. Serve warm with salsa or guacamole.
