  • 4 bell peppers (red, orange, or yellow)
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups cooked jasmine rice
  • 2 tsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup fresh cilantro, chopped
  • Sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds. Arrange upright in a baking dish.
  2. In a skillet over medium heat, cook seasoned chicken breasts until golden brown (6-7 minutes per side).
  3. Shred the cooked chicken using two forks.
  4. In a bowl, combine shredded chicken, cooked rice, taco seasoning, and half of the cheddar and mozzarella cheeses.
  5. Fill each pepper with the chicken-rice mixture; pack it in gently.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle remaining cheese on top, and bake for an additional 10 minutes until bubbly.
