Ingredients
- 4 bell peppers (red, orange, or yellow)
- 3 boneless, skinless chicken breasts (about 1 lb)
- 2 cups cooked jasmine rice
- 2 tsp taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ¼ cup fresh cilantro, chopped

Instructions
- Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds. Arrange upright in a baking dish.
- In a skillet over medium heat, cook seasoned chicken breasts until golden brown (6-7 minutes per side).
- Shred the cooked chicken using two forks.
- In a bowl, combine shredded chicken, cooked rice, taco seasoning, and half of the cheddar and mozzarella cheeses.
- Fill each pepper with the chicken-rice mixture; pack it in gently.
