  • 4 medium bell peppers (orange or yellow)
  • 1 lb ground beef (or turkey/plant-based alternative)
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup tomato sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté onions and garlic until translucent (3-4 minutes). Add ground meat; cook until browned.
  3. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix until combined.
  4. Stuff each pepper with the filling and place in a baking dish. Top with shredded cheese.
  5. Cover with foil and bake for 25-30 minutes until peppers are tender. Remove foil for the last 5 minutes to melt cheese.
