  • 8 oz short pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 12 medium mozzarella balls
  • 12 slices black olives
  • 1/2 cup Italian dressing
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop cherry tomatoes and cucumber, and finely dice the red onion.
  3. Create mozzarella eyeballs by placing a slice of black olive on top of each mozzarella ball.
  4. In a large bowl, mix the cooled pasta with chopped veggies and mozzarella eyeballs. Drizzle with Italian dressing and toss gently.
  5. Top with chopped parsley before serving.
