  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté for 3-4 minutes until fragrant and translucent.
  2. Stir in the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 6-8 minutes; drain excess fat if necessary.
  3. Add chopped bell peppers, chili powder, and cumin; stir well and cook for another 3 minutes.
  4. Pour in diced tomatoes (with juices) and rinsed kidney beans; mix thoroughly to combine.
  5. Reduce heat to low, cover partially, and let simmer for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning before serving hot with optional toppings like cheese or sour cream.
