  • 1 cup diced red bell pepper

  • 1/2 cup mayonnaise

  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in boiling salted water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper. Mix until smooth.
  3. Add diced red bell pepper, sliced green onions, and chopped cilantro to the dressing. Stir well.
  4. Gently fold in the cooled macaroni until evenly coated with dressing.
