  • 1 lb boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup fresh pineapple, diced
  • 2 chipotle peppers in adobo sauce
  • 1 small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped (optional)
  • 6 taco shells (soft flour or crunchy corn)
  • 2 tbsp lime juice (freshly squeezed)

Instructions

  1. Chop chicken into small cubes for even cooking.
  2. Marinate chicken in a bowl with chipotle peppers and lime juice for at least 30 minutes.
  3. Heat oil in a skillet over medium heat; cook marinated chicken for 7-10 minutes until golden brown.
  4. Add pineapple during the last few minutes of cooking to caramelize.
  5. Warm taco shells as per package instructions.
  6. Fill each shell with the chicken-pineapple mixture and top with red onion and cilantro. Squeeze lime juice before serving.
