  • 10 gyoza wrappers
  • 1 cup ground pork
  • 1 tsp fresh ginger, finely grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups low-sodium vegetable broth
  • 2 tbsp Thai red curry paste
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of ½ lime

Instructions

  1. In a large bowl, mix ground pork with ginger and a pinch of salt and pepper.
  2. Place about 1 tablespoon of filling in each gyoza wrapper, wet the edges, and fold to seal tightly.
  3. Heat oil in a skillet over medium heat and sauté gyoza until golden brown on the bottom (about 3-4 minutes). Add water, cover, and steam until cooked through.
  4. In another pot, combine vegetable broth, coconut milk, and Thai red curry paste; simmer until well blended.
  5. Stir in fresh basil, cilantro, and lime juice just before serving.
