- 9 lasagna noodles (no-boil)
- 1 lb ground sausage (spicy or mild)
- 1 cup bell peppers (chopped, mixed colors)
- 1 medium onion (chopped)
- 2 tbsp Cajun seasoning
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, brown the ground sausage; add onion and bell peppers until onions are translucent.
- In a bowl, mix ricotta cheese with egg, half of the mozzarella, Parmesan, salt, and pepper.
- Start layering: spread meat sauce on the bottom, place noodles, half the cheese mixture, then more meat sauce. Repeat layers ending with noodles topped with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly and golden brown.
- Let it rest before slicing. Serve warm.
