  • 4 boneless, skinless chicken breasts
  • Juice of 3 fresh limes
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 ripe avocado, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine lime juice, olive oil, minced garlic, cilantro, salt, and pepper to create the marinade.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.

  4. Remove chicken from marinade and discard leftover marinade. Grill for 6-8 minutes per side until cooked through (internal temperature of 165°F/75°C). If baking, cook for about 20-25 minutes.
