  • 6 cups chicken broth
  • 2 large fresh lemons, juiced and zested
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Dice carrots and celery, and mince garlic.
  2. Sauté vegetables: In a large pot over medium heat, heat olive oil. Add carrots, celery, and garlic; cook until softened (about 5 minutes).
  3. Add chicken and broth: Place chicken breasts in the pot with chicken broth. Bring to a gentle boil.
  4. Infuse with lemon: Reduce heat to low, squeeze in lemon juice, add zest, and simmer for 20 minutes until chicken is cooked through.
  5. Shred chicken: Remove chicken from the pot, shred it using two forks, then return it to the soup.
  6. Season: Taste and season with salt and pepper as needed.
